"Beet dreams are made of this"
Receta para 12 muffins
Ingredientes:
1 ½ plátanos maduros
1/3 batata hervida (si no tiene, usar dos plátanos enteros)
1/4 remolacha hervida
1 taza de leche
de coco
4 cucharadas de aceite de coco
Canela molida a gusto
Miel a gusto (uso miel de magüey)
1 taza de harina
de coco
5 cucharadas de harina
de yuca
1 zanahoria rayada
Mezcle en la batidora los primeros 6 ingredientes. Luego coloque en un
recipiente y añada la miel, las harinas y la zanahoria rayada. Mezcle todo. Cubra la bandeja
de muffins con aceite de coco. Coloque en el horno a 350 F (180 C). Espere 20
minutos o haga la prueba del palillo. Deje enfriar por 5 minutos y disfrute.

Add ground cinnamon to taste
Add honey to taste ( I prefer magüey honey)

Blend the first 6 ingredients. Then place
the mix in a bowl and add the honey, flour and shredded carrot. Mix it all. Coat muffin
cups with coconut oil. Divide batter among muffin cups. Place in oven at 350 F
(180 C ). Wait 20-30 minutes or until a wooden pick inserted in center comes out
clean. Cool 5 minutes. Enjoy!
